Servings 1 Pound lean ground chuck 1/2 c. chopped onion 1 (4 oz.) can tomato sauce 1 tsp. chili powder 1/2 tsp. ground cumin 1/4 tsp. salt 1/4 tsp. pepper 4 (6 in.) corn tortillas 3/4 c. (3 oz.) shredded low-fat cheese Vegetable cooking spray 1/2 c. water Preheat oven to 400 degrees. Cook ground chuck and onion in a large nonstick skillet over medium heat until browned, stirring to crumble. Drain and Pat dry. Return meat to skillet; stir in tomato sauce and seasonings. Continue to cook over medium heat, stirring constantly until thoroughly heated. Layer tortillas, meat sauce, and cheese in 2-qt. casserole dish coated with cooking spray; pour water over top.
