Scalloped Potatoes

Makes 10 (1/2 c.) servings

1 clove minced garlic

1 tbsp. margarine

1 tbsp. cornstarch

1/2 tsp. salt

1/8 tsp. pepper

1 1/2 c. skim milk

1 1/2 pounds red potatoes peeled and thinly sliced

1/4 c. chopped onion

1/4 c. chopped fresh parsley

Vegetable cooking spray

 Saute garlic in melted margarine in a small saucepan until tender.

 Stir in cornstarch, salt and pepper. Add milk, stirring well. Cook over medium heat, stirring constantly for 2 mins. or until mixture is thickened and bubbly. Remove sauce ffrom heat and set aside.

 Arrange half of each: potatoes, onions, and parsley in bottom of 2 qt. casserole dish coated with cooking spray. Top with half of sauce. Repeat layers with remaining ingredients.

 Cover and bake at 350 degrees for 45 mins. stirring once. Uncover and bake an additional 30 mins. or until potatoes are done.
